Your kale and cabbage salad with sunflower seeds and chicken breast sounds delicious and well-balanced Adrienne! The lean protein from the chicken will help keep you satiated while the fibrous kale and cabbage are excellent choices to keep you full. The measured amount of sunflower seeds adds a bit of healthy fats which is a great addition. Youre just one away from hitting your target. 1 more to go!

Instructions

  • 1.

    1. Preheat your grill or grill pan over medium heat.

  • 2.

    2. Season the chicken breast with your choice of spices (salt, pepper, garlic powder).

  • 3.

    3. Grill the chicken for about 6-7 minutes on each side, or until fully cooked. Let it rest before slicing.

  • 4.

    4. In a large bowl, combine the chopped kale, shredded cabbage, cherry tomatoes, cucumber, and red onion.

  • 5.

    5. Add the sliced grilled chicken and sunflower seeds to the salad.

  • 6.

    6. Drizzle with the dressing and toss gently to combine.

  • 7.

    7. Serve immediately or refrigerate for later.
