Instructions
1.
1. Preheat your grill or grill pan over medium heat.
2.
2. Season the chicken breast with salt and pepper, then grill for about 6-7 minutes on each side, or until fully cooked. Let it rest for a few minutes before dicing.
3.
3. In a large bowl, combine the spinach, arugula, cucumber, bell pepper, red onion, avocado, and cherry tomatoes.
4.
4. Add the diced grilled chicken to the salad mixture.
5.
5. Drizzle the yogurt dressing over the salad and toss gently to combine.
6.
6. Serve immediately, or refrigerate for up to an hour before serving for a chilled salad.
