Instructions

1. Start by grilling the chicken breasts. Season them with salt, pepper, and your favorite herbs (like rosemary or thyme) for added flavor. Grill for about 6-7 minutes on each side until fully cooked.

2. While the chicken is grilling, prepare the salad base. In a large bowl, combine the chopped kale and shredded cabbage.

3. Once the chicken is cooked, let it rest for a few minutes before slicing it into strips.

4. Add the sliced chicken, sliced almonds, raisins, and chopped leftover potatoes to the salad bowl.

5. Drizzle the poppyseed dressing over the salad and toss everything together until well combined.
