Instructions

  • 1.

    1. Preheat your grill or grill pan over medium heat.

  • 2.

    2. Season the chicken breasts with salt and pepper, then grill for about 5-7 minutes on each side until fully cooked.

  • 3.

    3. While the chicken is grilling, prepare the salad by combining mixed greens, cherry tomatoes, bell pepper, cucumber, red onion, and shredded carrots in a large bowl.

  • 4.

    4. In a small bowl, whisk together olive oil and balsamic vinegar. Drizzle over the salad and toss to combine.

    5. Once the chicken is cooked, slice it and place it on top of the salad.

    6. If desired, sprinkle feta cheese over the salad before serving.
