Instructions
1.
Preheat your grill or grill pan over medium-high heat (about 5 minutes).
2.
Season the chicken breasts with olive oil, salt, pepper, and Italian seasoning.
3.
Grill the chicken for about 6-7 minutes on each side, or until fully cooked (internal temperature of 165°F).
4.
While the chicken is grilling, toss the zucchini slices in olive oil, salt, and pepper.
5.
Grill the zucchini for about 3-4 minutes on each side until charred and tender.
6.
In a large bowl, combine arugula, spinach, and grilled zucchini.
7.
Slice the grilled chicken and add it to the salad.
8.
Sprinkle with Parmesan cheese and drizzle with a little more olive oil if desired.
9.
Toss gently and serve immediately.
