Instructions

  • 1.

    Preheat your grill to medium-high heat (about 375°F).

    Season the chicken breasts with salt, pepper, and a drizzle of olive oil.

    Grill the chicken for about 6-7 minutes on each side, or until fully cooked. Let it rest before slicing.

    In a large bowl, combine the chopped romaine lettuce, cherry tomatoes, cucumber, and red onion.

    Add the cooked brown rice and sunflower seeds to the salad.

    In a small bowl, whisk together olive oil and balsamic vinegar. Drizzle over the salad and toss to combine.
