Instructions

    1. Begin by shredding the rotisserie chicken into bite-sized pieces.

  • 2.

    2. In a large bowl, combine the shredded chicken, chopped collard greens, and diced crispy bell peppers. Season with salt and pepper to taste.

    3. Lay out the whole wheat tortillas on a clean surface.

  • 4.

    4. Spread a generous tablespoon of tzatziki sauce on each tortilla.

  • 5.

    5. Divide the chicken mixture evenly among the tortillas, adding a sprinkle of low-fat cheese if desired.

  • 6.

    6. Roll the tortillas tightly, folding in the sides as you go to create a wrap.

  • 7.

    7. Heat a non-stick skillet over medium heat and place the wraps seam-side down. Cook for 2-3 minutes on each side until golden brown and heated through.
