Instructions
1.
Preheat your grill or stovetop grill pan over medium-high heat (about 5 minutes).

In a large bowl, combine the ground beef with garlic powder, onion powder, salt, and pepper. Form into 4 equal patties.

In a separate bowl, toss the diced potatoes, zucchini, yellow squash, carrots, and corn with olive oil, salt, and pepper.

Spread the veggie mixture on a baking sheet and roast in the oven at 400°F (200°C) for 20-25 minutes, stirring halfway through.
5.
While the veggies are roasting, grill the hamburger patties for about 5-7 minutes on each side, or until they reach your desired doneness.
6.
Once everything is cooked, serve the grilled hamburger alongside the roasted veggie medley. Garnish with fresh herbs if desired.

2 medium yellow squashes, diced

2 medium carrots, diced

1 cup corn (fresh or frozen)

4 medium red potatoes, diced

1 tablespoon olive oil
8.
1 teaspoon garlic powder
9.
1 teaspoon onion powder
10.
Salt and pepper to taste
11.
Fresh herbs (like parsley or basil) for garnish
