Instructions
1.
Preheat your oven to 400°F (200°C).

In a large bowl, combine the ground beef, breadcrumbs, Parmesan cheese, egg, garlic, oregano, basil, salt, and pepper. Mix until well combined.

Form the mixture into meatballs, about 1 inch in diameter, and place them on a baking sheet lined with parchment paper.

Bake the meatballs in the preheated oven for 20 minutes, or until cooked through and browned.

While the meatballs are baking, heat the tomato sauce in a saucepan over medium heat until warmed through.

Once the meatballs are done, add them to the sauce and let them simmer for 5 minutes.
7.
In a separate bowl, toss the salad greens with olive oil and balsamic vinegar.
8.
Serve the meatballs over a bed of salad greens, drizzled with extra sauce if desired.

1/2 cup whole wheat breadcrumbs

1/4 cup grated Parmesan cheese

1 large egg
5.
2 cloves garlic, minced

1 tsp dried oregano

1 tsp dried basil
8.
Salt and pepper to taste
9.
2 cups homemade or low-sugar tomato sauce
10.
4 cups mixed salad greens (lettuce, spinach, etc.)
11.
1 tbsp olive oil
12.
1 tbsp balsamic vinegar
