“Great lunch Rylee! I see some rice corn black olives and what else did you have?”
Instructions
1.
Cook the brown rice according to package instructions (about 30 minutes).
2.
In a large skillet, heat olive oil over medium heat (about 2 minutes).

Add the ground turkey to the skillet, breaking it apart with a spatula. Cook until browned (about 5-7 minutes).
4.
Stir in the diced bell peppers, corn, black beans, cumin, chili powder, salt, and pepper. Cook for another 5-7 minutes until the vegetables are tender.
5.
If using, add the spinach and cook until wilted (about 2 minutes).
6.
Serve the turkey mixture over the cooked brown rice.
