Instructions
1.
Cook the chickpea pasta according to package instructions. Drain and set aside.

In a large skillet, heat olive oil over medium heat. Add diced onion and minced garlic, sautéing until translucent (about 3-4 minutes).

Add the sliced mushrooms and cook until softened (about 5 minutes).

Stir in the lean ground turkey, breaking it apart with a spatula. Cook until browned (about 5-7 minutes).

Add the diced tomatoes, Italian seasoning, salt, and pepper. Simmer for 5 minutes to combine flavors.
6.
Mix in the cooked chickpea pasta and half of the mozzarella cheese. Stir until well combined.
7.
Transfer to a baking dish, sprinkle the remaining mozzarella cheese on top, and bake at 350°F (175°C) for 10 minutes until cheese is melted and bubbly.
