Instructions

  • 1.

    Heat olive oil in a large skillet over medium heat (about 2 minutes).

  • 2.

    Add diced bell peppers and sauté for 5 minutes until softened.

  • 3.

    Add ground turkey to the skillet, breaking it apart with a spatula. Cook for 7-10 minutes until browned and cooked through.

  • 4.

    Stir in cooked quinoa and fresh spinach, cooking until spinach wilts (about 2-3 minutes).

  • 5.

    Remove from heat and mix in goat mozzarella and goat cheddar cheese until melted. Season with salt and pepper to taste.
