Instructions

  • 1.

    Heat olive oil in a large skillet over medium heat (about 2 minutes).

  • 2.

    Add the ground turkey and cook until browned, breaking it apart with a spatula (about 5-7 minutes).

  • 3.

    Stir in the mushrooms, bok choy, and celery, cooking until the vegetables are tender (about 5 minutes).

  • 4.

    Add the chopped spinach and cook until wilted (about 2 minutes).

  • 5.

    Season with salt and pepper to taste.

  • 6.

    Serve topped with shredded cheese and a dollop of light mayonnaise.
