Instructions
1.
In a skillet, heat olive oil over medium heat (if using).

Add ground turkey, season with salt and pepper, and cook until browned (about 7-10 minutes).

While the turkey is cooking, toast the whole wheat bread.

Once the turkey is cooked, assemble the sandwich: place spinach, turkey, tomato, and avocado on one slice of bread, then top with the other slice.
5.
Serve with air-popped popcorn on the side.
