Youre halfway through your weekly target of eating protein and fiber-rich dinners! Your salad sounds delicious and packed with fiber from the lettuce spinach and avocado and protein from the ham and pickled egg.

Instructions

  • 1.

    In a large bowl, combine the mixed greens, diced ham, chopped pickled eggs, diced avocado, halved cherry tomatoes, diced cucumber, and sliced onion.

  • 2.

    Sprinkle the sunflower seeds over the top.

  • 3.

    Drizzle the low-fat ranch dressing over the salad and toss gently to combine all ingredients.

  • 4.

    Serve immediately or refrigerate for up to 30 minutes before serving for a chilled salad.
