Great lunch Zoe! The ham sandwich with spinach is a good choice as it contains lean proteins and fiber-rich vegetables. And adding yogurt and blueberries is a fantastic! Well done on selecting a balanced and satisfying lunch

Instructions

  • 1.

    1. Start by preparing the yogurt dip: In a bowl, mix the plain Greek yogurt with fresh blueberries. Mash the blueberries slightly to create a creamy texture. Set aside.

  • 2.

    2. Take two slices of whole wheat sandwich bread and layer them with 2 oz of lean ham each.

  • 3.

    3. Add a generous handful of fresh spinach leaves on top of the ham.

  • 4.

    4. Season with a pinch of salt and pepper to taste.

  • 5.

    5. Top with another slice of whole wheat bread to complete the sandwich.

  • 6.

    6. Repeat the process for the remaining ingredients to make a total of 4 sandwiches.

  • 7.

    7. Serve the sandwiches with the blueberry yogurt dip on the side.
