Instructions
1.
Place the eggs in a pot and cover them with water. Bring to a boil over medium heat (about 5 minutes).
2.
Once boiling, cover the pot and remove it from heat. Let the eggs sit for 10-12 minutes.
3.
After the time is up, transfer the eggs to an ice bath to cool for 5 minutes.
4.
Peel the eggs and slice them in half.
5.
In a bowl, mix the chopped spinach, cherry tomatoes, olive oil, salt, and pepper.
6.
Serve the halved eggs on a plate with the spinach and tomato mixture on the side.
