Instructions

Preheat your oven to 400°F (200°C).

In a large bowl, combine the gnocchi, diced bell peppers, chopped onion, cherry tomatoes, and sliced vegan sausage.
3.
Drizzle with olive oil and sprinkle garlic powder, Italian seasoning, salt, and pepper. Toss until everything is well coated.
4.
Spread the mixture evenly on a baking sheet and roast for 20 minutes, stirring halfway through.
5.
In the last 5 minutes of roasting, add fresh spinach to the baking sheet.
6.
Remove from the oven and sprinkle with shredded vegan cheese before serving.
