Instructions
1.
Preheat your oven to 400°F (200°C).

In a large bowl, combine the chopped bell peppers, red onion, cherry tomatoes, and minced garlic. Drizzle with olive oil, and season with salt and pepper. Toss to coat.

Spread the vegetable mixture on a baking sheet and roast for 20 minutes.

While the vegetables are roasting, cook the gnocchi according to package instructions. Drain and set aside.
5.
After 20 minutes, add the sliced vegan sausage to the baking sheet and roast for an additional 10 minutes.
6.
In a large bowl, combine the roasted vegetables, vegan sausage, and cooked gnocchi. Sprinkle with nutritional yeast and toss gently to combine.
7.
Serve warm, garnished with fresh basil if desired.

2 bell peppers (any color), chopped

1 red onion, sliced

1 cup cherry tomatoes, halved

4 cloves garlic, minced

2 vegan sausages, sliced

2 tablespoons olive oil
8.
Salt and pepper to taste
9.
1/4 cup nutritional yeast (for a cheesy flavor)
10.
Fresh basil for garnish (optional)
