Instructions
1.
In a bowl, mix chickpea flour, water, and salt until smooth. Let it sit for 10 minutes.

Heat a non-stick skillet over medium heat and lightly grease it with olive oil.

Pour a ladle of the chickpea mixture into the skillet, spreading it into a thin circle. Cook for 2-3 minutes on each side until golden brown. Repeat for all tortillas.
4.
In another skillet, heat olive oil and cook chicken tenders until golden and cooked through, about 5-7 minutes per side.
5.
Assemble the tortillas by placing romaine lettuce, chicken tenders, and a drizzle of honey mustard dressing on each tortilla.
6.
Serve with a cheese stick on the side.
