“Egg white wraps with dairy free cheese. It was just right on filling and satisfying. I think I struggled with eating it too fast. Dont get me wrong I could have eaten it down in seconds. I did take more time to eat it. I wonder if there is a eating meditation type thing? Where I can be thinking about how grateful for the progress Im making and be okay with not finishing something. Just really intentional with listening to my body and when a need has been fulfilled and not necessarily over filling it.”

Instructions
1.
In a non-stick skillet, spray a light layer of olive oil and heat over medium heat.
2.
Whisk the egg whites in a bowl and season with salt and pepper.
3.
Pour half of the egg whites into the skillet, swirling to create a thin layer. Cook for about 2-3 minutes until set.
4.
Sprinkle half of the dairy-free cheese, spinach, bell peppers, and mushrooms on one half of the wrap.
5.
Fold the wrap over and cook for another minute until the cheese melts. Remove from the skillet and repeat with the remaining ingredients.
6.
Serve warm and enjoy your healthy high protein wraps!
