One more lunch to go! Your sandwich is a a fantastic combination of lean protein and fiber. The pickles on the side are a nice touch too

Instructions

  • 1.

    1. Start by laying out the slices of whole grain bread on a clean surface.

  • 2.

    2. Spread 1 tablespoon of honey mustard on each slice of bread.

  • 3.

    3. Layer 2 oz of lean honey mustard ham on four of the slices.

  • 4.

    4. Top the ham with a generous handful of arugula and a sprinkle of chopped red onion.

  • 5.

    5. Place the remaining slices of bread on top to form sandwiches.

  • 6.

    6. Cut each sandwich in half and serve with pickles on the side.

    2 cups arugula

    1 small red onion, finely chopped
