Great job! Youve successfully hit your weekly target of fiber and lean protein-rich lunches. Your choice of brown and wild rice with green beans black olives spinach leaves and a touch of hummus sounds both delicious and nutritious. I hope you continue finding joy in creating these wholesome meals.

Instructions

  • 1.

Rinse the brown and wild rice under cold water. In a pot, combine the rice and vegetable broth or water. Bring to a boil, then reduce heat to low, cover, and simmer for about 30 minutes or until the rice is tender. (30 minutes)

  • 2.

While the rice is cooking, steam the green beans until tender, about 5-7 minutes. (7 minutes)

  • 3.

In a large bowl, combine the cooked rice, steamed green beans, sliced black olives, and fresh spinach. (5 minutes)

  • 4.

Drizzle the hummus over the rice mixture and toss gently to combine. Season with salt and pepper to taste. (2 minutes)

  • 5.

Serve warm or at room temperature, garnished with additional spinach if desired.
