Instructions
1.
Rinse the brown and wild rice under cold water. In a pot, combine the rice and vegetable broth or water. Bring to a boil, then reduce heat to low, cover, and simmer for about 30 minutes or until the rice is tender. (30 minutes)

While the rice is cooking, steam the green beans until tender, about 5-7 minutes. (7 minutes)

In a large bowl, combine the cooked rice, steamed green beans, sliced black olives, and fresh spinach. (5 minutes)
4.
Drizzle the hummus over the rice mixture and toss gently to combine. Season with salt and pepper to taste. (2 minutes)
5.
Serve warm or at room temperature, garnished with additional spinach if desired.
