Instructions
1.
Preheat your oven to 400°F (200°C).

In a bowl, mix the jerk seasoning with olive oil to create a marinade. Coat the salmon fillets with the marinade and let them sit for about 10 minutes.

While the salmon marinates, prepare the cauliflower rice. In a large skillet, sauté the riced cauliflower over medium heat for about 5-7 minutes until tender. Season with salt and pepper to taste.

In another skillet, combine the corn, black beans, and diced red bell pepper. Cook over medium heat for about 5 minutes until heated through. Stir in the diced mango and remove from heat.

Place the marinated salmon fillets on a baking sheet lined with parchment paper. Bake for 12-15 minutes, or until the salmon is cooked through and flakes easily with a fork.

To serve, place a portion of cauliflower rice on each plate, top with the corn salsa, and add a salmon fillet. Drizzle with Greek yogurt and garnish with fresh cilantro if desired.
