Instructions

In a large pot, heat olive oil over medium heat. Add chopped onion and garlic, sautéing until translucent (about 5 minutes).

Add sliced carrots and cook for another 5 minutes.

Stir in the lentils, vegetable broth, cumin, and turmeric. Bring to a boil, then reduce heat and simmer for 20 minutes, or until lentils are tender.

Add chopped spinach, lemon juice, and zest. Season with salt and pepper to taste. Cook for an additional 5 minutes.

For the broccoli salad, in a bowl, combine chopped broccoli, dried cranberries, and sunflower seeds. Drizzle with a little olive oil and lemon juice, mixing well.

Serve the soup hot with the broccoli salad on the side.
