Leftover baked salmon for last night and a sweet potato with cinnamon and a few pieces of raw pecans.

Delightful meal! I love the combination of salmon and sweet potato. The pecans add a nice crunch and a bit of healthy fats which is a great addition

Instructions

  • 1.

    Preheat your oven to 400°F (200°C).

  • 2.

    Wash and pierce the sweet potatoes with a fork. Place them on a baking sheet and bake for 25-30 minutes, or until tender.

  • 3.

    While the sweet potatoes are baking, prepare the salmon. Place the salmon fillets on a lined baking sheet.

  • 4.

    Drizzle olive oil over the salmon and season with salt, pepper, and lemon slices on top.

  • 5.

    Bake the salmon in the oven for 15-20 minutes, or until cooked through and flaky.

  • 6.

    In the last 5 minutes of baking, add the chopped pecans to the baking sheet to toast them slightly.

  • 7.

    Once everything is cooked, serve the salmon alongside the sweet potatoes, topped with cinnamon and pecans.

    2 medium sweet potatoes

    1 tablespoon olive oil

    1 teaspoon cinnamon

    1/2 cup raw pecans, chopped

    1 lemon, sliced

  • 7.

    Salt and pepper to taste
