Instructions
1.
1. Rinse the lentils under cold water and set aside.

2. In a large pot, heat the olive oil over medium heat. Add the chopped onion, garlic, carrot, and celery. Sauté for about 5 minutes until the vegetables are softened.

3. Stir in the cumin and paprika, cooking for another minute until fragrant.

4. Add the rinsed lentils, diced tomatoes, and vegetable broth. Bring to a boil, then reduce the heat and let it simmer for about 20-25 minutes, or until the lentils are tender.

5. If using, stir in the fresh spinach and cook for an additional 2-3 minutes until wilted.

6. Season with salt and pepper to taste. Serve hot with a slice of whole wheat bread.

1 can (14 oz) diced tomatoes (no added sugar)

1 medium onion, chopped

2 cloves garlic, minced

4 cups vegetable broth (low sodium)

1 carrot, diced

1 celery stalk, diced
8.
1 teaspoon cumin
9.
1 teaspoon paprika
10.
Salt and pepper to taste

2 cups fresh spinach (optional)

1 tablespoon olive oil
13.
1 slice whole wheat bread (for serving)
