Instructions

  • 1.

    Cook the lentil noodles according to package instructions (about 7-9 minutes). Drain and set aside.

  • 2.

    In a large saucepan, heat olive oil over medium heat. Add garlic powder, onion powder, and black pepper, stirring for 1 minute.

  • 3.

    Pour in the almond milk and bring to a gentle simmer. Stir in the low-fat cheese until melted and creamy.

  • 4.

    Add the cooked lentil noodles and spinach to the cheese sauce, mixing well to combine. Cook for an additional 2-3 minutes until heated through.

  • 5.

    Season with salt to taste and serve warm.
