Instructions
1.
Preheat your oven to 400°F (200°C).
2.
In a large bowl, toss the zucchini, yellow squash, onion, and garlic with olive oil, Italian seasoning, salt, and pepper. Spread the veggies on a baking sheet and roast for 20 minutes, or until tender.

While the veggies are roasting, cook the high-protein pasta according to package instructions. Drain and set aside.

In a saucepan, combine the low-fat cheese and almond milk over medium heat. Stir until the cheese is melted and the mixture is smooth.

Add the cooked pasta and roasted veggies to the cheese sauce. Stir to combine, and add fresh spinach if using. Cook for an additional 2-3 minutes until heated through.

Serve warm and enjoy your healthy mac n cheese!
