Instructions

  • 1.

    Cook the brown rice according to package instructions (about 20 minutes).

  • 2.

    While the rice is cooking, heat 1 tablespoon of olive oil in a large skillet over medium heat.

  • 3.

    Add the green beans and sauté for about 5 minutes until tender-crisp.

  • 4.

    Add minced garlic and cook for another minute until fragrant.

  • 5.

    Push the green beans to the side of the skillet and add the remaining olive oil.

  • 6.

    Season the Mahi Mahi fillets with salt, pepper, and paprika, then place them in the skillet.

  • 7.

    Cook the fillets for about 4-5 minutes on each side, or until they are cooked through and flaky.

  • 8.

    Drizzle lemon juice over the fish and vegetables before serving.

  • 9.

    Serve the Mahi Mahi and green beans over a bed of brown rice.
