Omelet with 2 eggs plus one serving liquid egg whites. Mango/black bean/cilantro salad with no dressing. I was pretty hungry but this filled me up :)

Instructions

  • 1.

    In a large bowl, combine the diced mangoes, black beans, cilantro, red bell pepper, red onion, and jalapeño (if using).

    Squeeze the lime juice over the salad and season with salt and pepper to taste.

    Toss gently to combine all ingredients evenly.

  • 4.

    Serve immediately or refrigerate for 30 minutes to allow flavors to meld.

    Juice of 2 limes
