Instructions
1.
1. Boil the potatoes in a large pot of salted water for about 15-20 minutes, or until tender. Drain and set aside.

2. In the same pot, add the green beans and cook for 5-7 minutes until tender. Drain and set aside.

3. In a large bowl, mash the potatoes with olive oil (or butter) and milk until smooth. Season with salt and pepper to taste.

4. Cook the lean protein in a skillet over medium heat until fully cooked, about 6-8 minutes per side for chicken or turkey.

5. Serve the mashed potatoes topped with green beans and the lean protein on the side.

2 cups green beans, trimmed

4 medium potatoes, peeled and cubed
3.
1/2 cup low-fat milk or unsweetened almond milk
4.
1 tablespoon olive oil or unsalted butter
5.
Salt and pepper to taste
6.
1 pound lean protein (chicken breast, turkey, or lean ham)
