Instructions

Preheat your grill or oven to medium-high heat (about 375°F).

Season the chicken breast with salt, pepper, and a drizzle of olive oil.

Grill the chicken for about 6-7 minutes on each side, or until fully cooked (internal temperature of 165°F).

While the chicken is cooking, prepare the salad by combining mixed greens, diced tomatoes, cucumber, and red onion in a large bowl.
