Snackish dinner tonight. Chicken breast Bib lettuce olives cashews carrots peppers cucumber and tzatziki. I did not eat all that tzatziki just to be clear! I know not portioning it out can lead to eating too much without realizing it but I was mindful.

Instructions

  • 1.

    1. Start by grilling the chicken breasts until fully cooked, about 6-7 minutes per side. Let them rest before slicing.

  • 2.

    2. While the chicken is cooking, prepare the vegetables: wash and slice the carrots, bell peppers, and cucumber.

  • 3.

    3. Arrange the bib lettuce leaves on a large platter as a base.

  • 4.

    4. Once the chicken is ready, slice it and place it on top of the lettuce.

  • 5.

    5. Add the sliced vegetables, olives, and cashews around the chicken.

  • 6.

    6. Serve with a small bowl of tzatziki for dipping.

    1/2 cup of tzatziki (low-fat or homemade)
