Instructions

1. Cook the brown rice according to package instructions (about 30 minutes).

2. While the rice is cooking, season the chicken breasts with olive oil, lemon juice, oregano, salt, and pepper.

3. Grill or pan-sear the chicken over medium heat for about 6-7 minutes on each side, or until fully cooked (internal temperature of 165°F/75°C).

4. In a bowl, mix the salad greens, diced tomatoes, and Greek yogurt to create a fresh salad.

5. Once the chicken is cooked, slice it and serve it over the rice with the salad on the side.
