Instructions

1. Preheat your grill to medium-high heat.

2. In a bowl, mix olive oil, oregano, garlic powder, paprika, salt, and pepper.

3. Coat the chicken breasts with the spice mixture and let them marinate for 10 minutes.

4. While the chicken is marinating, cook the brown rice according to package instructions.

5. Grill the chicken for about 6-7 minutes on each side, or until fully cooked (internal temperature of 165°F).

6. In a large bowl, combine salad greens and diced tomatoes. Drizzle with a little olive oil and toss.

7. Once the chicken is cooked, slice it and serve over the rice with the salad on the side.
