Mediterranean bean salad and lamb sausage

Instructions

  • 1.

    In a large bowl, combine the chickpeas, kidney beans, green beans, red bell pepper, cherry tomatoes, and red onion.

  • 2.

    In a small bowl, whisk together the olive oil, lemon juice, oregano, salt, and pepper.

  • 3.

    Pour the dressing over the salad and toss to combine.

  • 4.

    In a skillet, cook the lamb sausage over medium heat until browned and cooked through, about 5-7 minutes.

    Serve the salad topped with the sliced lamb sausage.
