Instructions

  • 1.

    Preheat your oven to 400°F (200°C).

  • 2.

    In a large bowl, toss the green beans, cherry tomatoes, garlic, olive oil, salt, pepper, and Italian herbs until well coated.

  • 3.

    Spread the vegetable mixture on a baking sheet and roast in the oven for about 15 minutes, or until the green beans are tender and the tomatoes are slightly blistered.

  • 4.

    While the vegetables are roasting, season the New York strip steaks with salt and pepper.

  • 5.

    Heat a skillet over medium-high heat and add a little olive oil. Sear the steaks for about 4-5 minutes on each side for medium-rare, or until your desired doneness.

  • 6.

    In the last minute of cooking, add the fresh spinach to the skillet to wilt it slightly.

  • 7.

    Serve the steaks alongside the roasted green beans and tomatoes, and enjoy your healthy meal!
