Instructions
1.
In a food processor, combine the chickpeas, black olives, green olives, Kalamata olives, lemon juice, and minced garlic.
2.
Blend until smooth, scraping down the sides as needed. If the mixture is too thick, add a little water or olive oil to reach your desired consistency.
3.
Taste and season with salt and pepper as needed.
4.
If using, add the fresh spinach and blend until fully incorporated.
5.
Transfer to a serving bowl and enjoy with fresh vegetables or whole-grain crackers.

1/2 cup black olives, pitted
