Pasta with 1/2 beyond meat brat and sauted peppers and onions Side of carrots and cucumber (I had a few more too) and caprese salad. Im realizing I eat a lot of Italian and Mexican dishes but it works for me!

Italian and Mexican dishes are delicious so no wonder you enjoy them! Your dinner choice sounds balanced with pasta Beyond Meat brat sauted peppers and onions along with a side of carrots cucumber and caprese salad. Keep enjoying your favorite flavors while maintaining a well-rounded diet!

Instructions

  • 1.

    Cook the whole grain spaghetti according to package instructions until al dente. Drain and set aside (about 10-12 minutes).

  • 2.

    In a large skillet, heat olive oil over medium heat. Add sliced onions and sauté for 3-4 minutes until translucent.

  • 3.

    Add the sliced bell peppers and crumbled Beyond Meat brat to the skillet. Cook for another 5-7 minutes until the vegetables are tender and the brat is heated through.

  • 4.

    Stir in the tomato sauce and let it simmer for 5 minutes. Season with salt and pepper to taste.

  • 5.

    Combine the cooked spaghetti with the sauce mixture, tossing to coat evenly.

  • 6.

    Serve topped with diced mozzarella, halved grape and yellow tomatoes, and fresh basil. Enjoy with cucumber slices and baby carrots on the side.

    1 yellow bell pepper, sliced

    1 small onion, sliced

  • 6.

    1 cup tomato sauce (low-sugar)

  • 7.

    1/2 cup fresh mozzarella cheese, diced

  • 8.

    1 cup grape tomatoes, halved

  • 9.

    1 cup yellow tomatoes, halved

  • 10.

    1/4 cup fresh basil, chopped

  • 11.

    1 cucumber, sliced

  • 12.

    1 cup baby carrots

  • 13.

    1 tbsp olive oil

  • 14.

    Salt and pepper to taste
