Instructions
1.
Preheat your oven to 375°F (190°C).
2.
In a large bowl, coat the chicken breasts with olive oil, salt, and pepper.
3.
Spread the pesto evenly over the chicken breasts.
4.
Place the chicken in a baking dish and scatter the sun-dried tomatoes and broccoli around it.
5.
Bake for 25 minutes or until the chicken is cooked through and the broccoli is tender.
6.
Serve hot, garnished with additional pesto if desired.

4 boneless, skinless chicken breasts (about 1.5 lbs)
2.
1 cup homemade or store-bought pesto (preferably low-fat and low-sugar)
3.
2 cups broccoli florets
4.
1/2 cup sun-dried tomatoes (packed in water, drained)
5.
1 tablespoon olive oil
6.
Salt and pepper to taste
