Instructions
1.
Cook the whole grain pasta according to package instructions until al dente (about 8-10 minutes). Drain and set aside.
2.
In a skillet, heat the Beyond Meat brat over medium heat until browned and heated through (about 5-7 minutes). Slice into bite-sized pieces.
3.
In a large bowl, combine the cooked pasta, pesto, and spinach. Toss until the pasta is well coated.
4.
Add the sliced brat, cottage cheese, diced tomato, and fresh basil. Gently mix to combine all ingredients.
5.
Serve immediately, garnished with additional basil if desired.
