Instructions
1.
Preheat your oven to 350°F (175°C).
2.
In a large bowl, mix the Greek yogurt, crushed pineapple, applesauce, eggs, and vanilla extract until well combined.
3.
In another bowl, whisk together the whole wheat flour, baking powder, baking soda, and salt.
4.
Gradually add the dry ingredients to the wet mixture, stirring until just combined. Avoid overmixing.
5.
If using, fold in the chopped walnuts or almonds for added protein.
6.
Spoon the batter into a greased or lined muffin tin, filling each cup about 2/3 full.
7.
Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean.
8.
Allow the muffins to cool for a few minutes before transferring them to a wire rack.

1 teaspoon vanilla extract

1/2 cup chopped walnuts or almonds (optional for added protein and healthy fats)
