Thats a great low-calorie option Debbie hope you enjoyed it. The yogurt adds a nice touch of protein and the pineapple adds some fiber as well. Great work with incorporating a cardio session in todays schedule as well. Lets keep up the good work!

Instructions

  • 1.

    Preheat your oven to 350°F (175°C).

  • 2.

    In a large bowl, mix the Greek yogurt, crushed pineapple, applesauce, eggs, and vanilla extract until well combined.

  • 3.

    In another bowl, whisk together the whole wheat flour, baking powder, baking soda, and salt.

  • 4.

    Gradually add the dry ingredients to the wet mixture, stirring until just combined. Avoid overmixing.

  • 5.

    If using, fold in the chopped walnuts or almonds for added protein.

  • 6.

    Spoon the batter into a greased or lined muffin tin, filling each cup about 2/3 full.

  • 7.

    Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean.

  • 8.

    Allow the muffins to cool for a few minutes before transferring them to a wire rack.

    1/2 teaspoon salt

  • 10.

    1 teaspoon vanilla extract

  • 11.

    1/2 cup chopped walnuts or almonds (optional for added protein and healthy fats)
