Instructions
1.
Preheat your oven to 400°F (200°C).

In a bowl, toss the cauliflower florets with olive oil, harissa paste, salt, and pepper. Spread them on a baking sheet and roast for 20-25 minutes until golden and tender.

While the cauliflower is roasting, press the tofu to remove excess moisture, then cube it. Sauté in a non-stick pan over medium heat until golden brown, about 10 minutes.
4.
In a large bowl, combine the arugula, cooked lentils, roasted cauliflower, sautéed tofu, and pistachios.
5.
Drizzle with tahini dressing (made from tahini, lemon juice, garlic, and water) and toss gently to combine.
6.
Top with croutons before serving.

1 cup firm tofu, cubed

4 cups arugula

1/2 cup pistachios, shelled

1 cup whole grain croutons
