Instructions

1. Begin by bringing a pot of water to a gentle simmer over medium heat.

2. While the water heats, toast the dark rye bread slices until golden brown.

3. Once the water is simmering, crack each egg into a small bowl, then gently slide them into the water one at a time. Poach for about 3-4 minutes for a runny yolk or longer for a firmer yolk.

4. While the eggs are poaching, prepare the vegetables. Rinse the spinach and slice the cucumber and cherry tomatoes.

5. Assemble the dish by placing a generous handful of spinach on each slice of toasted rye bread.

6. Once the eggs are done, carefully remove them with a slotted spoon and place one on top of the spinach on each toast.

7. Season with black pepper and serve with cucumber and cherry tomatoes on the side.
