Instructions
1.
In a large pot, heat a little olive oil over medium heat. Add the chopped onion and bell pepper, sautéing until softened (about 5 minutes).

Add minced garlic and cook for another minute until fragrant.
3.
Stir in the ground pork, breaking it apart with a spoon. Cook until browned (about 5-7 minutes).

Add the chili powder, cumin, paprika, salt, and pepper. Mix well to coat the meat and vegetables.

Pour in the diced tomatoes, beans, and chicken broth. Stir to combine.
6.
Bring the mixture to a boil, then reduce heat and let it simmer for 20 minutes. If using, add spinach in the last 5 minutes of cooking.
7.
Taste and adjust seasoning if necessary. Serve hot.

1 can (15 oz) black beans, rinsed and drained

1 can (14.5 oz) diced tomatoes, no added sugar
5.
1 medium onion, chopped

2 cloves garlic, minced
7.
1 bell pepper, chopped
8.
2 tbsp chili powder
9.
1 tsp cumin
10.
1 tsp paprika
11.
Salt and pepper to taste
12.
2 cups spinach (optional for added fiber)
13.
1 cup low-sodium chicken broth
