Instructions

    1. In a large skillet, heat olive oil over medium heat. Add sliced onions and sauté for 3-4 minutes until they start to soften.

    2. Add the sliced red and green bell peppers to the skillet and cook for another 3-4 minutes until they are tender.

    3. Stir in the lean pork carnitas and cook until heated through, about 5 minutes. Season with salt and pepper to taste.

    4. Meanwhile, microwave the chopped kale for 2-3 minutes until wilted.

    5. To assemble, place a portion of the wilted kale in a bowl, top with the pork and vegetable mixture, and sprinkle with mozzarella cheese and a dollop of sour cream.
