I got a late start today and made that vital TikTok breakfast bowl for lunch! With eggs light cheese diced potatos and bacon bits this time I bought bacon bits which come in at 25 calories per tablespoon :)

Instructions

    Preheat your oven to 400°F (200°C).

    In a large bowl, toss the diced sweet potatoes with olive oil, garlic powder, paprika, salt, and pepper. Spread them on a baking sheet and roast for 20 minutes, or until tender.

    While the sweet potatoes are roasting, season the pork chops with salt, pepper, and any additional spices you prefer.

  • 4.

    In a skillet over medium heat, cook the pork chops for about 4-5 minutes on each side, or until they reach an internal temperature of 145°F (63°C).

  • 5.

    In the last few minutes of cooking, add the chopped spinach to the skillet to wilt.

  • 6.

    Once everything is cooked, combine the roasted sweet potatoes, pork chops, spinach, and sprinkle with light cheese and bacon bits before serving.
