Instructions

Preheat your oven to 400°F (200°C).

In a large bowl, toss the diced sweet potatoes, zucchini, and red onion with olive oil, garlic powder, paprika, salt, and pepper until evenly coated.

Spread the vegetables on a baking sheet in a single layer and roast for 20-25 minutes, or until tender and slightly caramelized, stirring halfway through.
4.
While the vegetables are roasting, heat a skillet over medium heat and cook the lean pork sausage for about 10-12 minutes, or until browned and cooked through.
5.
If using, add fresh spinach to the skillet during the last 2 minutes of cooking to wilt it.
6.
Serve the sausage alongside the roasted vegetables for a balanced meal.
