Instructions

  • 1.

    Preheat your oven to 400°F (200°C).

  • 2.

    Season the pork chops with salt, pepper, garlic powder, and paprika.

  • 3.

    Heat olive oil in a skillet over medium-high heat. Sear the pork chops for 3-4 minutes on each side until browned.

  • 4.

    Transfer the pork chops to a baking dish and add sliced carrots around them. Bake for 15-20 minutes until the pork is cooked through (internal temperature of 145°F).

  • 5.

    While the pork is baking, prepare the smoothie. In a blender, combine Greek yogurt, blueberries, spinach, and a splash of water. Blend until smooth.

  • 6.

    Serve the pork chops with roasted carrots and a side of the smoothie.
